  1. 2 tablespoons olive oil
  2. 2 pounds beef shank
  3. salt and auditorium showground black pepper to taste
  4. 1 onion, cut into 1/2-inch cubes
  5. 2 stalks celery, cut into 1/2-inch cubes
  6. 1 cup Marsala wine
  7. 1 (14 ounce) can beef broth
  8. water to cover
  9. 2 tablespoons dried tarragon

  1. Preheat oven to 300 degrees F (150 degrees C).
